Harvest Salad
The best salad to make your own and when in a time-crunch.

Ingredients:
3/4 bag of arugula (Trader Joe’s)
3/4 bag of baby kale (Trader Joe’s)
3/4 bag of diced Butternut squash (trader Joe’s)
1 container or 1/2 fresh pomegranate arils
1/4 cup almonds, chopped
1/4 cup walnuts, chopped
1 granny smith or honey crisp apple, chunked
1/4 cup cilantro, chopped
1 cup quinoa
1 cup extra virgin olive oil
1/4 cup pomegranate balsamic
1/4 cup maple balsamic
Instructions
Preheat oven to 400°F. On a baking sheet, evenly spread butternut squash and drizzle with 2 TBS extra virgin olive oil. Bake until soft about 25 minutes.
In a medium sauce pot, prepare quinoa according to package.
In a mixing cup, combine 2/3 cup of extra virgin olive oil and both types of balsamic and whisk until well blended.
Combine all ingredients in a large mixing bowl or salad bowl, dress, and enjoy!
