Easy Greens and Turkey Meatballs

Ingredients:
1 lb ground turkey
1 TBS seasoning of choice
1 TBS garlic infused olive oil
1/4 cup red pepper pesto sauce (or sauce of choice)
2 bunches of fresh Kale
1 package broccolini spears
1/4 cup extra virgin olive oil
Salt and Pepper; to taste
Instructions
Preheat oven to 350°F.
Wash and trim kale and broccolini. Place on a baking sheet and drizzle with extra virgin olive oil. sprinkle with salt and pepper. set aside.
In a medium mixing bowl, add turkey, seasoning, garlic infused olive oil, and red pepper pesto sauce. Mix until thoroughly combined. Roll into balls (about the size of a golf ball) and place in oven. Bake for about 25 minutes or until internal temperature is 165°F. This is also the time to put the vegetables in the oven too.
Once meatballs are done cooking set into a warmer or cover with foil to keep warm.
Increase oven temperature to 450°F. Cook vegetables for another 5-10 minute or until crispy.
