Shaved Brussels Sprout Salad

A unique take on a typical salad with an extraordinary flavor profile!

Ingredients:

  • 5 cups of shaved Brussels sprouts (~1 lb whole Brussels sprouts)

  • 3/4 cup unsweetened dried cherries

  • 3/4 cup hazelnuts; chopped

  • 2 lemons; juiced

  • 1/2-3/4 cup high quality Extra virgin olive oil

  • 1/2 tsp sea salt (to taste; add more if needed)


Instructions

  1. Shave 5 cups of whole Brussels sprouts into a large salad bowl.

  2. Chop hazelnuts and add to salad bowl along with unsweetened dried cherries

  3. For dressing: juice 2 lemons and whisk together with sea salt and extra virgin olive oil. Pour over salad and mix until well coated.

  4. Top with extra nuts or cherries, plate and serve!

Chef’s note: for added flavor add 1/2 cup freshly grated parmesan cheese.
