Power Up Pesto

A nutrient-packed take on pesto that can easily be a new household favorite.

Cook Time: 10 min
Total Time: 30 min

Ingredients:

  • 1-1/2 cup fresh basil leaves; no stems

  • 1-1/2 cup fresh spinach

  • 1/4 cup pine nuts

  • 1/4 cup walnuts

  • 1/4 cup pecans

  • 3-4 cloves garlic

  • 3/4 cup extra virgin olive oil

  • Sea salt; to taste


Instructions

  1. Wash and dry spinach and basil leaves. Remove stems from basil.

  2. Combine all ingredients in a blender or food processor and blend until at desired consistency.

  3. Add in salt and blend.

  4. Serve right away, or freeze in silicone soup trays for later use, or store in jars for 3-5 days in refrigerator.
