True Foods Copycat Kale Salad
Kristin’s take on a resturants’s most popular salad that can be prepared in minutes at home.

Ingredients:
1 bundle of dinosaur kale
1 lemon (juice and zest)
3-4 cloves of fresh garlic, minced
3/4 cups of high quality extra virgin olive oil
1 cup of freshly grated parmesan cheese
Instructions
Wash, strip from stem, and finely chop 1 bundle of dinosaur kale and place in a large salad or mixing bowl.
Finely mince 3-4 cloves of garlic. In a small sauce pan on medium-low heat, sauté garlic and about 1 tbsp of extra virgin olive oil. sauce until fragrant and lightly browned. Remove from heat.
In a separate smaller mixing bowl, add the juice of 1 lemon and about 1/4 of its zest. Then add garlic and olive oil from sauce pan. Top that with remains amount of extra virgin olive oil and whisk together.
Freshly grate 1 cup of parmesan cheese.
Add 1/2 cup of the grated cheese and dressing mixture to kale bowl and thoroughly mix.
Plate and serve, leaving extra cheese for topping the salad.
