Lemony Garlic Kale with Grilled Chicken
Instructions:
Preheat grill to medium-high heat
Generously drizzle extra virgin olive oil over chicken breasts. Massage oil onto chicken to full coat. Then season with kosher salt and fresh cracked pepper.
Once oven grill is preheated, place chicken on grill for 25-30 minutes or until internal temperature reaches 165°F. Once cooked, slice chicken into desired size.
Next, thoroughly wash bundle of dinosaur kale and then destem and chop kale into a bowl.
In a saucepan on medium-low heat, sauté olive oil and garlic until fragrant.
Pour oil and garlic into a bowl, add garlic powder, onion powder, Himalayan salt, and lemon juice to olive oil and garlic mixture. Whisk together.
Pour mixture from bowl over chopped kale and massage kale until coated.
Plate kale in desired portions and top with sliced chicken breast.
